Healthy, Quick & Easy Chicken Burrito Bowl

Are you always trying to think of new healthy dinner ideas that are fresh, light, quick and easy? Well, think no more! This delicious burrito bowl recipe is right up your alley. With a good balance of veggies, protein and healthy carbohydrates you will be left feeling satisfied without that awful tummy bloat.

Serves 2:

For the chicken:
2 small chicken breasts
¼ lime, juiced
2 tbsp olive oil
1 tsp chicken seasoning
1 tsp garlic salt

For the rice:
1 cup long grain rice
2 cups chicken stock
1 tbsp butter
¼ lime, juiced
1 bunch cilantro
Pinch of salt


For the Burrito Salad:
½ cup red capcisum, diced
¼ cup tomatoes, diced
¼ cup onions, diced
¼ cup canned corn, drained and rinsed
¼ cup canned black beans, drained and rinsed
1 cup lettuce, chopped
1 small bunch of coriander, chopped 


  1. Place the rice in a sieve and run under cold water until the water runs clear. Transfer the rice to a bowl and allow this to soak for at least 5 minutes. Meanwhile, place the chicken stock in a pot and bring to the boil. Pour the rice into the pot reduce the heat to low. Allow the rice to simmer for 10 minutes or until the liquid has been absorbed. The cilantro and lime will be added later before serving!

  2. Now for the chicken! While you are waiting for the rice to cook, cut the chicken breast into small pieces. Place the chicken pieces in a bowl along with the olive oil, chicken seasoning and garlic salt and gently toss to combine. Add the juice of half of a lime to the mixture and toss again. Cover the chicken with cling film and allow to marinate in the fridge for 15 minutes. After it has had time to soak in all the delicious flavours, cook the chicken on in a hot pan for 3-5 minutes or until cooked through. Once cooked, set aside and allow to cool.

  1. Prepare all of your salad veggies.
4. To serve: Place the rice, chopped coriander, salt and the juice of half a lime in a medium bowl and gently toss to combine. Spoon the rice into two smaller bowls. Top each bowl with half of the salad mixture, half of the chicken, and dollop of greek yoghurt. Enjoy!
