This Mango Coconut Chia Parfait is the perfect 'dessert for breakfast' type of dish. It's gluten free and tastes absolutely amazing!
400ml coconut milk
5 tbsp desiccated or grated coconut
5 tbsp 100% pure maple syrup
1 tsp vanilla extract
1 fresh mango, diced
1. Combine the coconut milk, coconut, maple syrup, chia seeds and vanilla extract in a bowl. Whisk until the ingredients are well combined.
2. Place the mixture in the refrigerator for 20 minutes. Stir thoroughly and place back in the refrigerator for a minimum for 4 hours. Best results are achieved if left overnight.
3. Place some diced mango at the bottom of your serving glasses, followed by the yoghurt and chia mix. Continue alternating between mango and yoghurt and chia mix before topping each glass with fresh mango.
4. Add some extra mango to the top layer and enjoy!
